
i made my husbands grandmas cookies last weekend and they are the best. i thought i would share. you really need to try them......if you dare. i double the recipe if we are taking these somewhere to share. it is not a huge batch.
grandma lula's cookies
jumbo marshmallows.
2 cups flour
1/2 teas. salt
1/2 teas. soda
1/2 cup cocoa
1/2 cup butter
1 teas. vanilla
1 cup sugar
1 egg
1/2 cup milk
cream sugar, butter and vanilla. blend in dry ingredients. mix until well combined. make your dough balls, i use a cookie scoop, and place 2 " apart on cookie sheet. i like to use parchment, these cookies get messy towards the end. bake @ 350 for 8 min.
while these are cooking get your jumbo marshmallows and cut them in half. cut about 12 in half.
pull cookies out and set 1/2 a marshmallow on top of each cookie and return to the oven for 1 min. i squish the marshmallow down a bit when i take them out so they are not so tall.
i usually pre-make the icing before i cook the cookies. that way i can drizzle the icing a couple of minutes after i take the cookies out. drizzle when warm but not way hot.
icing
1 1/2 cups powdered sugar
2 tablespoons cocoa
1 dash salt
2 tablespoons butter
3 tablespoons milk
you want the icing to be the right consistency to drizzle over the tops of the cookies. but not too thin. so you might have to add more milk.
let the icing set on the cookies a couple of hours before serving. enjoy...yum
